Strawberries—The Little Red Super Fruit

Sometimes I write about foods when it’s time to plant them and sometimes when time to harvest them.  If you have an established strawberry crop, June is the month to harvest strawberries in Kansas, but they have been “in season” in the grocery store since about March.

A fun and creative way to use strawberries for a kids’ snack!

Here are some fun facts about strawberries:

  • 90% of America’s strawberries are grown in California

  • 8 strawberries provide one day’s recommended vitamin C intake (and you thought oranges were a good source of vitamin C!)

  • Strawberries are also a good source of potassium, folate, fiber, phytochemicals, and flavonoids

Because I recommend 3 food groups at breakfast, and because breakfast is an easy place to take in fruit, this week’s Friday Food Day recipe will feature a yummy breakfast recipe using strawberries.
